My sister Rachel and I are similar in our thoughts about cooking. We love food that tastes good, but it better not have too many ingredients on this list. We both have three small children, so cooking in the kitchen is limited to quick and easy. However, we both want to make good food for families and make it ourselves if we can. This recipe for Swiss cheese chicken is an easy favorite of mine. She gave me the recipe about 5 years ago. I made it this week when we had company. I prepped everything and put it in the fridge earlier in the day. When it was time to bake I simply took it out of the fridge and put it in the over covered with foil. I served it to our guests with a simple salad and crescent rolls. I was able to do it while caring for my three kids at the same time, so that tells you about the simplicity of this recipe. All three of my kids ate this meal too, so that is another added bonus! Anything I can find for all three kids to eat is on my list of recipes to keep on hand!
Here is the recipe and how I made it-
Prep Time- 20 Minutes
Cook Time- 50-60 Minutes at 350 degrees (until golden brown and meat is cooked in the middle)
Ingredients:
4-5 Boneless, skinless chicken breasts
1/4-1/2 cup milk (depends on the thickness of the soup- it should be an applesauce consistency when mixed with the soup)
2 cans of condensed cream of chicken soup
1 cup of bread crumbs
3 tablespoons of melted butter
Salt and Pepper to taste
Dehydrated garlic
Dehydrated onions
Step 1: Place the boneless, skinless chicken breasts in a 9″x13″ baking dish that has been greased (or sprayed with Pam cooking spray).
Step 2: Season the meat. I used dehydrated garlic and onions that I purchased at Costco. I use these seasoning for most meals to add flavor without the calories. I then salt and peppered the chicken as well.
Step 3: Place 2 slices of Swiss cheese on top of each piece of chicken.
Step 4: Mix the cream of chicken soup with the milk using a whisk. Then pour the mixture over the cheese and chicken.
5. Step 5: Sprinkle 1 cup of bread crumbs over the top of everything.
Step 6: Melt 3 tablespoons of butter and pour over the top of the breadcrumbs. (I actually used Brummel and Brown Yogurt Butter to reduce the calories and fat and it turned out great).
Step 7: Bake for 50-60 minutes until the meat is thoroughly cooked.
